I guess I'll break this down into categories.

Print

InDesign, QuarkXPress, Illustrator, Photoshop, Acrobat and DeltaGraph.

I've pretty much abandoned Quark. I keep up to date with the latest releases, but only because a client will occasionally send a Quark doc or request I create a new file with it.

DeltaGraph is a program similar to Excel, except that you can save the graphs and charts as EPS files and use Pantone colors.

Web

Dreamweaver, GoLive, Coda, CSSEdit, Style Master, Text Wrangler

Other 

There's a slew of other apps I use, but it would probably bore you to list them all. Most are utilities that have only one or two purposes. I'll occasionally do some light video or audio work. I have some programs that are like Flash, but the learning curve is not as steep. And of course I use all the Microsoft stuff like PowerPoint.
